Ingredients
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup unrefined coconut oil
  • 1/2 teaspoon vanilla extract, non-alcoholic
  • 2 cups crispy almonds
  • 2 cups raw nuts, soaked
  • 1 cup pumpkin seeds (or sunflower seeds)
  • 1cup unsweetened shredded coconut, dried
  • 1/3 cup sesame seeds
  • 1 teaspoon ground cinnamon
  • 1/2 tsp. ground cardamom
  • 1 cup mixed dried fruits

Instructions
  1. Mix coconut oil, vanilla and sweeteners together in a small bowl.
  2. Chop nuts into large or desired sizes/chunks in a food processor (should be coarse). Mix with seeds, spices and coconut properly. Pour the coconut oil mixture over mixed nuts and seeds; stir to mix well. Add mixed dried fruits.
  3. Spread granola in a single thin layer on dehydrator trays lined with parchment paper or teflex sheets.
  4. Place in a dehydrator and dry at 115°F (46°C) for 24 hours, or until dry.
