Beets are delicious when dried and crunchy. They are naturally flavorful and the addition of rosemary is a great complement to their natural sweetness.

  • 4 large beets, washed
  • 2 Tbsp. olive oil
  • 1 tsp. fresh rosemary, finely chopped
  • 1/2tsp. sea salt
  • 1/4 tsp. pepper

Instructions
  1. Cut tops of beets. Slice beets about 1/8-1/4 inch (3-6 mm) wide. Use a mandolin if possible.
  2. Toss beets, olive oil, rosemary, salt and pepper in a bowl until evenly coated.
  3. Set the dehydrator to 145°F (63°C). Place trays in dehydrator for 10-12 hours.
