- 4 large beets, washed

- Cut tops of beets. Slice beets about 1/8-1/4 inch (3-6 mm) wide. Use a mandolin if possible.
- Toss beets, olive oil, rosemary, salt and pepper in a bowl until evenly coated.
- Set the dehydrator to 145°F (63°C). Place trays in dehydrator for 10-12 hours.
