- 12 tbsp freshly squeezed lime juice (from about 6 limes)

- Wash, peel, and chop the mango.
- In a blender, combine the mango, honey, applesauce, and freshly squeezed lime and puree.
- Taste the blended mix and add honey as needed.
- Ensure the mix is not too thick.
- Line the dehydrator trays with parchment paper.
- Spread out a thin layer of the mango mix on the dehydrator trays.
- Set temperature to 135°F (57°C) and dehydrate for 12-18 hours. Note that the timing may take up to 20 hours in some cases. But when the leather is done, it would be non-sticky.
- Allow the leather to cool and cut into strips before storing them in airtight containers.
