Indian Cauliflower | Commercial Dehydrators

Cauliflower is an extremely versatile vegetable and holds up well to many flavors. In this recipe, classic Indian spices and a hint of sweetness are combined to create a snack that hits all the right notes. Cauliflower can be blanched first but skipping this will not significantly alter the taste of the final product. The color, however, is preserved better with blanching.

Ingredients
  • 2 heads cauliflower, cut into bite size pieces
  • 1/4 cup low sodium soy sauce
  • 1/8 cup honey
  • 1 tsp. curry powder
  • 1 tsp. turmeric

Instructions
  1. Blend all ingredients in a bowl except cauliflower. Whisk to ensure honey is incorporated. Add cauliflower and mix well so vegetables are well coated.
  2. Place cauliflower pieces onto dehydrator sheets and dehydrate at 140°F (60°C) for one hour. Lower the temperature and dehydrate at 110°F (43°C) for another 10 hours or until crispy.
